4 Ingredient Creamy Avocado Pasta

Avocados, the mother of all fruits and another one of my family’s favorites are packed with tons of nutrients. I had never had this superfood until I was in my early twenties, so I wanted to make sure my little one tried it early. It was his first solid food and now he loves it. It’s my go to if we are running low on options.

Some of the nutrients avocados contain are the B vitamins, folate, vitamin C, K, magnesium, and potassium along with healthy fats. They have been shown to improve heart health and eye health and can help your body absorb nutrients better. When I was pregnant with my son, I ate one every day to help with leg cramps. They are also rich in antioxidants. Antioxidants have been shown to fight cell damage, helping to battle cancer and disease. These berries are amazing and a great addition to any meal. One other thing I love about them is their versatility. You can add them to a smoothie, use them as a base for pudding, add them to toast, make guacamole or make them into a sauce, like in this pasta. 

This creamy pasta is a quick and easy lunch or last-minute dinner option and the best part is, that it’s shareable. Whenever I make it for lunch, my son and I both eat it for a couple of days. All you need are a couple of avocados, hummus, a lemon, and pasta. Depending on the size of the avocados you may only need one but I used one and a half. This pasta is yummy on its own but tomatoes, bell peppers, or herbs also make a great addition. Add the avocados, hummus, and lemon into a blender and blend until smooth, toss with your favorite pasta, add your toppings if desired and that’s it!

When I make this for my son, I love to use the ezpz mini mat, their products are BPA free and made from food-grade silicone, so I feel comfortable using them for his food. I topped his pasta portion with chili powder and hemp hearts.

4 Ingredient Creamy Avocado Pasta

This creamy avocado pasta is so easy! There's only 4 ingredients and it makes the perfect lunch or dinner to share.

Ingredients

4 Ingredient Creamy Avocado Pasta
  • 1-2 avocados
  • 1/4 cup organic hummus
  • 1 table spoon fresh squeezed lemon juice
  • 1 box of pasta

Instructions

  1. Blend avocados, hummus and lemon juice together in a blender until smooth. If you don't have a blender you can also mash and mix it all together with a fork.
  2. Cook pasta per box instructions.
  3. When the pasta is still warm, toss with the avocado and hummus mixture.
  4. Top with desired toppings, share and enjoy!

Notes

According to the American Academy of Pediatrics it is not recommended to feed babies solid foods before 6 months of age.
