Healthy Peanut Butter Cookie Dough Bites…yum!

I’m not a huge fan of long introductions, especially to a yummy recipe, so let’s get to the point. These healthy chocolate covered peanut butter cookie dough bites are a great snack for the older kids or a perfect treat after dinner for mom and dad. They have no additional sugars other than the ones found in the chocolate chips, so you can indulge a bit without feeling guilty. They also pack some protein along with healthy fats, vitamins, and minerals. Omega-3s, the healthy fats are found in the hemp hearts. Hemp hearts have been proven to help in reducing inflammation and are great for momma’s to be and the developing baby’s brain. Hope you enjoy!

Chocolate Covered Peanut Butter Cookie Dough Bites

These yummy, cookie dough bites make the perfect snack for mom or dad and since there is no added sugar they make the perfect after dinner treat for the older kids too.

Ingredients

  • 1 cup organic oats
  • 1/4 cup organic peanut butter powder
  • 1/3 cup organic creamy peanut butter
  • 2 tablespoons hemp hearts
  • 1 tablespoon vanilla
  • 1/4-1/3 cup water
  • 1/2 cup organic dark chocolate chips

Instructions

  1. Pulse oats in a food processor until very fine.
  2. Add all other ingredients, except water, and pulse until combined.
  3. Add water one tablespoon at a time and pulse until the ingredients form a sticky dough that holds together with pinched.
  4. Using a cookie scoop, scoop out dough and form into about 12 equal sized balls. Place on a parchment lined cookie sheet and chill for about 20 minutes.
  5. Heat chocolate chips over a double boiler. Once melted dip the cookie dough balls into the chocolate and place back on the parchment paper, sprinkle with sea salt if desired and place in the fridge to chill.
  6. Store in an airtight container in the refrigerator and enjoy!
