Watermelon Mint Popsicles

Summer break is quickly coming to an end and we are eating all the watermelon we can get our hands on. I have always loved watermelon and have fond memories of eating it in the summer heat with my papa. It wasn’t until recently though, that I discovered this melon was more than just a summer treat, it is full of antioxidants, vitamins, and minerals and is extremely hydrating.

Watermelon contains lycopene, a powerful antioxidant that is also found in tomatoes. According to Mind Body Green, lycopene is a carotenoid found in red, pink, and orange produce and a powerful phytonutrient. It is an anti-inflammatory antioxidant and promotes the longevity of cells. It has also been shown to protect against the sun, so it’s especially important to eat foods that contain it in the summertime. Watermelon also contains vitamin A and vitamin C. Vitamin C helps to promote immunity and promotes skin health.

Another good reason to eat watermelon in the summer is the water content. It is about 92% water, so consuming it on a regular basis helps you to stay hydrated and the addition of coconut water helps to replace electrolytes if you’re sweating on a hot day.

Recipe Notes

Depending on the size of your popsicle molds, this recipe can make between 8-10 popsicles, if you have extra leftover you can add it to an ice cube tray for a tasty addition to a glass of water.

Watermelon Mint Popsicles

These popsicles are refreshing, hydrating and full of nutrients.

Ingredients

  • 4 cups chopped fresh watermelon
  • 1/4 cup coconut water
  • 5 fresh mint leaves

Instructions

  1. Blend all ingredients together in a blender until combined.
  2. Pour into popsicle molds and place in the freezer for at least 2 hours.
  3. Enjoy!
