Grated Carrot and Zucchini Salad

If you couldn’t tell already, I love carrots. They can be versatile and work in so many recipes from savory to sweet. They are a staple in our house and get used on a daily basis in juices and recipes.

Carrots are also highly nutritious. They not only contain beta carotene, as described in previous posts but also contain biotin, vitamin B6, vitamin K, and potassium. Since they include these vitamins and minerals carrots have been shown to be good for weight loss, energy, bone health, and blood pressure control. Carrots are also high in fiber. Fiber aids in gut health by helping our bodies to eliminate waste. Successfully eliminating waste improves gut health and can lead to many health benefits like improving sleep and brain fog and helping to fight disease. Women should be eating about 25 grams of fiber a day and babies 1-3 years of age should be eating about 19 grams. One carrot has about 1.5 grams and one apple has about 4.5 grams. Eating more fruits and veggies, like this carrot salad, is the best way to increase your fiber intake and improve your health.

Grated Carrot and Zucchini Salad

This tangy raw carrot salad packs amazing health benefits, is quick and easy and perfect for the whole family.

Ingredients

  • 1 cup grated organic zucchini
  • 2 cups grated organic carrots
  • 1/2 tablespoon chopped fresh organic parsley
Dressing
  • 1 tablespoon raw apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon organic extra virgin olive oil
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ginger powder

Instructions

  1. Grate zucchini and carrots and place in a bowl with parsley.
  2. Whisk all dressing ingredients together in a separate bowl until well combined.
  3. Pour dressing over carrot mixture and toss until combined.
  4. Serve immediately and enjoy!

Notes

According to the American Academy of Pediatrics it is not recommended to feed babies solid foods before 6 months of age.
