Easy Mediterranean Salad

This yummy, easy salad is packed with flavors from the Mediterranean, greens, peppers, tomatoes, cucumbers, chickpeas, and feta. On top of all that, the tangy lemon dressing is light and fresh. It’s the perfect long-live summer salad!

Salads are an easy lunch option. I love that you can eat this one for a couple of days so you aren’t making lunch every day. It is also packed with nutrients and fiber. Each veggie has its own list of nutrients but the addition of the chickpeas adds loads of fiber, about 12 grams per cup, and protein, about 14 grams per cup. Chickpeas also contain iron, calcium, magnesium, potassium, zinc, copper, selenium, folate, choline, and vitamins C, E, and K. The magnesium and folate content is so high that just one cup meets about 75% of the daily recommended intake. That is so many nutrients in one tiny legume.

Recipe Notes

  • You can use any organic greens you would like for this salad but I chose a spring mix for the variety of flavors and textures, but kale or spinach would work well too.

  • When looking for chickpeas, if you aren’t going to cook them yourself, try to find something with low sodium or no salt added. I like the Whole Foods boxed brand. They are organic and have no added salt.

  • If you would prefer not to make your own dressing Primal Kitchen has a Greek Vinaigrette that is so yummy and also works well with this salad.

To Make

I don’t think any recipe is easier than this salad. The hardest part is chopping the veggies and squeezing the lemon, after that all you do is throw everything into a bowl and enjoy the fresh flavors of the Mediterranean.

Easy Mediterranean Salad

This mediterranean salad is yummy for the whole family, fresh and easy.

Ingredients

  • 2 cups organic spring mix
  • 1/2 cup cooked organic chickpeas
  • 1/2 cup chopped organic bell pepper
  • 1/2 cup chopped organic cucumber
  • 1/2 cup organic cherry tomatoes, sliced in half
  • 1/2 cup organic crumbled feta
Tangy Lemon and Olive Oil Salad Dressing
  • Juice from one organic lemon
  • 3 tablespoons organic extra virgin olive oil
  • 1/4 teaspoon organic black pepper
  • 1/4 teaspoon organic garlic powder
  • 1/4 teaspoons dried organic oregano
  • 1/2 teaspoon organic honey
  • pinch of sea salt

Instructions

  1. Toss all salad ingredients together in a large glass storage container.
  2. Mix all dressing ingredients together in a small glass bottle or mason jar and shake to combine.
  3. Pour half of the salad dressing over top of the salad, add more dressing if desired and serve.
  4. Store in the refrigerator overnight for up to a day.
  5. Enjoy!

Notes

According to the American Academy of Pediatrics it is not recommended to feed babies solid foods before 6 months of age.
