Chocolate Almond Butter Bites

These chocolate almond butter bites make for an easy snack. They are full of protein and healthy fats with just a little hint of sweetness. The protein and healthy fats found in almond butter can help you to stay full longer and almond butter has also been shown to improve heart and skin health. Just a glance at the back of the jar reveals that almond butter contains fiber, protein, calcium, iron, and potassium. The shredded coconut included in these bites can also help you to stay full longer, because of its fiber content. Though I think the best ingredient in these bites are the pumpkin seeds. Pumpkin seeds include large amounts of magnesium, zinc, and iron, along with calcium, potassium, B vitamins, and protein. In fact, because of their high zinc content pumpkin seeds have been used as a treatment for prostate issues and can help to improve your immune function.

It’s amazing to me, that adding something as small as a pumpkin seed to your diet could help to improve your health. Small, simple switches like making your own snack that includes nutrient-rich, whole foods instead of eating a packaged cookie could make a large difference in the way your body functions and feels. Chocolate Almond Butter Bites

These yummy almond butter bites are the perfect healthy snack for mommas, dads and the older kids.

Ingredients

  • 1 cup organic almond butter
  • 1/4 cup organic cacao powder
  • 1/4 cup organic hemp hearts
  • 1/4 cup organic shredded coconut
  • 1/2 cup organic sprouted pumpkin seeds
  • 1/4 cup organic mini chocolate chips
  • 1/2 teaspoon vanilla
  • 1 tablespoon maple syrup

Instructions

  1. Mix all ingredients together in a large mixing bowl.
  2. Place in the refrigerator to chill for about 30 minutes.
  3. Once chilled use a cookie scoop to portion out bites, roll each into a ball and then roll in coconut or hemp hearts if desired.
  4. Store in the refrigerator.
