Carrot Cake Overnight Oats

As I’ve mentioned before, overnight oats are one of my go-to breakfasts. Since they are prepared the night before, breakfast runs a lot smoother in the morning.

If you like carrot cake, you’ll love these oats. They are hearty, to help you stay full longer and full of nutrients, along with fiber. The main star here is the antioxidant beta-carotene. Beta-carotene is what makes carrots orange and it is known as a cancer preventing and anti-aging antioxidant. It is the precursor to vitamin A, meaning that your body uses it to produce vitamin A. Vitamin A is known for its role in healthy eyes and healthy skin along with its role in supporting the immune system and promoting lubrication in the body. It is essential during pregnancy, for the growth of the baby’s heart, circulatory, respiratory system, and skeleton. For young children, vitamin A is important for their overall growth and the health of their bones and teeth. These are just a few of the crucial ways vitamin A helps nourish our bodies, there are so many more and it is such an important nutrient.

So far, my 16-month-old son likes to eat veggies. I’ve got my fingers crossed that this will never change but I have a little bit of a harder time. Even though I love vegetables, some days are so busy that by the time I make it to dinner I realize I haven’t had a vegetable all day. This is one of the main reasons I’ve started to add them to our breakfast. It’s a simple way to make sure to start the day off right and it helps me to make better choices later in the day.

Recipe Notes

Just a little tip about the oats, make sure to use organic quick oats. They are a better option for overnight oats, instead of old fashioned. The quick oats turn out more like the consistency of regular oatmeal after being in the refrigerator overnight.

Veggies for breakfast is always a good idea! These oats are an easy healthy breakfast that will keep you and your littles ones full all morning. They are perfect for momma and baby.

Ingredients

  • 1 cup organic quick oats
  • 2 medium sized carrots, shredded
  • ¼ cup organic shredded coconut
  • ¼ cup organic raisins
  • 1 tablespoon organic flax seed
  • ½ tsp organic cinnamon
  • 1 cup organic almond milk
  • Pinch of sea salt

Instructions

  1. Place all ingredients in a class storage container and mix to combine
  2. Store in the refrigerator overnight
  3. Enjoy

Notes

According to the American Academy of Pediatrics it is not recommended to feed babies solid foods before 6 months of age.
