Zucchini and Corn Salsa

This fun zucchini recipe is the only way we eat zucchini these days, I love it that much! It’s super simple to make and my whole family enjoys it so I have been making it pretty often. It is only four simple ingredients, zucchini, corn, red onion, and lime along with a few spices. It’s great by the spoonful or on chips.

Zucchini and Corn Salsa

Zucchini

Zucchini is a summer vegetable that includes the nutrients vitamin A, vitamin C and vitamin K, manganese, potassium, magnesium, folate, antioxidants and fiber. Many of these nutrients assist in eye health, immune system function and reproduction. The antioxidants in zucchini have been shown to help fight cancer in the body. If you want a zucchini that contains a high level of antioxidants, make sure to buy organic. A 2020 study showed that organic zucchini contained a higher level of antioxidants, compared to conventional grown zucchini.

Corn

I used sweet, white corn for this zucchini and corn recipe. Sweet, white corn contains fiber, vitamin C, iron, potassium, magnesium and some of the B vitamins. Vitamin C benefits the immune system, is a powerful antioxidant that can help to fight cell damage and it is great for your skin.

Red Onion

Red onions contain vitamin C, potassium, iron and calcium. They also contain antioxidants that have been shown to be cancer fighting and are rich in prebiotics that help digestion. The sulfur compounds in onions can also help to fight heart disease.

Corn and Zucchini Salsa

Corn and Zucchini Salsa

This salsa is fresh and tangy. It's the perfect way to add in extra veggies.

Ingredients

  • 2 cups frozen organic white sweet corn
  • 1 large organic zucchini cut into ½ inch pieces
  • ½ an organic red onion, diced
  • Juice from half an organic lime
  • 1 tablespoon avocado oil
  • ⅛ teaspoon salt
  • ¼ teaspoon chile powder
  • ¼ teaspoon cumin
  • ¼ teaspoon paprika
  • ½ teaspoon garlic powder

Instructions

  1. Place ½ tablespoon avocado oil and corn in a large saute pan over medium heat. Stir and allow to cook for 2-3 minutes.
  2. Add zucchini and cook for another 5-10 minutes until the zucchini is soft, stir occasionally.
  3. Reduce heat, add spices and ½ tablespoon oil, stir and allow to cook for another minute or two, then remove from heat.
  4. Stir in red onion and squeeze lime over top. Top with cilantro if desired.
  5. Serve with chips and enjoy!

Notes

According to the American Academy of Pediatrics it is not recommended to feed babies solid foods before 6 months of age.
