Simple Roasted Chicken Recipe
Looking for a simple weeknight meal? This simple roasted chicken recipe is the best! It comes together super quickly and then you just pop it in the oven and wait. I love it because it tastes delicious and because we always have leftovers. I am able to use the leftovers for lunch or dinner, sometimes both, the next day and I use the bones to make bone broth. What You Will Need for the Roasted Chicken
You only need a fee simple ingredients for this roasted chicken recipe. A pasture raised chicken, butter, oil, half a lemon, salt, pepper, garlic powder and rosemary. Coat the chicken and stuff with lemon and rosemary. Bake at 375 until the internal temp reaches 165. For me, this is typically about 90 minutes. I like to coat the chicken with the juices when I check the temperature and drizzle the juice over what’s on my plate.
Why Pasture Raised
I choose pasture-raised chickens because I want the meat we are eating to be the most nutrient-dense possible. It really does matter how an animal was raised and this can affect their nutrient status. You want to make sure the chickens have gotten adequate amounts of sunlight and are able to forage for bugs. Studies show that meat from pasture-raised chickens contains more beneficial fats than conventional. I purchase meat from a local source. This way I can directly find out how the chickens live, what they eat, and how they are processed. It has taken me about 4 years to get to this point. When I first switched to clean eating I bought organic meats at the grocery store, but along my health journey, I learned that these chickens are often times dipped in bleach before being packaged to kill bacteria. Roasted Chicken
Ingredients
- 1 pasture raised chicken
- 3 Tablespoon softened butter
- 2 Tablespoon avocado oil
- Juice from half a lemon
- 1 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 sprig rosemary
Instructions
- A few hours ahead of time place the butter on the counter to soften.
- Mix all ingredients, except rosemary, together in a small.
- Pour over the chicken and stuff with lemon and rosemary.
